To 500g Mix
1. Beat in 220ml (7 Fl.oz) water, add 75g (3oz) dried fruit
2. Leave to rest for 10 mins then roll out ¾” think, cut to shape
3. Rest on a greased tray for 10 mins and bake at gas Mark 4/ 450F/ 180C for 15 mins. (Deep fry for doughnut)

Extracted from the flower buds of coconut palm trees, coconut sugar is an unrefined brown sugar with a delicately sweet caramel flavour. Due to minimal processing it retains many of its vitamins and minerals including potassium, zinc, iron and B vitamins. Coconut sugar is a great choice for cooks as it’s so easy to substitute for regular sugar using a 1:1 ratio; experimenting with it as an ingredient is easy.
