How to Use Xanthan Gum

Xanthan gum can help to bind gluten free bread and baked goods, if not already included in your flour blend.

  • For bread 2 tsp to 500g flour
  • For cake 1/4 tsp to 200g flour
  • For pastry a pinch to 100g flour.
  • For sauce, sieve 1 tsp over 2 tbsp oil, mix into a paste and slowly beat in 500/600ml cold liquid before heating and seasoning.
